Ingredients
7 oz (200 g) of ricotta
2 eggs
1/2 cup of flour
1/2 tsp baking powder
Pinch of salt
1/2 tsp cinnamon
1 Tbsp confectioners sugar
1/2 tsp vanilla extract
Oil for frying
Directions
Mix the eggs and ricotta together until they become a smooth mixture.
Add the rest of the ingredients and mix everything well.
In a skillet, heat about an inch (2-3 cm) of oil. Once it is warm enough, drop the dough in using a teaspoon.
Fry them until they turn a light brown.
Take them out onto a paper towel.
Once they slightly cool off, top of with confectioners sugar.
Makes about 30
Thoughts
Baci di ricotta is an Italian pastry, and it means ricotta kisses.
This is the first time I made them, and they were wonderful! Very easy and fast to make as compared to donuts or usual munchkins.
I enjoyed these very much and found them to be unlike anything fried I’ve made before. They were fluffy, light, and didn’t soak up much oil which allowed for the real flavor to come through.

Wow they are looking yummy ! Can I use cottage cheese instead of ricotta? In my country , we don’t get ricotta that easily .

I think if you mix the cottage cheese well so that it becomes smooth, it should work. Let me know how it turns out 🙂
