Cheesecake

Crust

2.5 cups of flour

1/4 cup of sugar

2 sticks of butter (250 g)

2 tsp of baking powder

2 Tbsp of cocoa

Melt the butter.

Mix all the ingredients, without the cocoa, together with your hands until they make a soft mixture.

Spread out 3/4 of the dough in a round cake pan.

Add the cocoa to the remaining 1/4 of the dough and set aside.

Cheese 

35 oz (1 kg) of cream cheese

1.5 sticks of butter (about 188 g)

5 eggs

1.5 cups of sugar

1 package of vanilla or cream pudding powder

Separate the egg whites form the yolks. Beat the egg whites with sugar until they form a stiff, fluffy, white mixture.

Mix the rest of the ingredients together.

Add the beat egg whites to the cheese and mix it gently.DSC01638.JPG

Pour the mixture into the pan and sprinkle the remaining dough.

Bake at 325 F (163 C) for 60-70 min

Thoughts

This is a New York style cheesecake. It is heavy, yet soft due to the egg whites. I slightly modified this recipe from the original as I found it to be a bit too sweet. I prefer it with the amount of sugar that I have listed above.

This is a recipe my mom got from her friend many years ago, and it has become my favorite cheesecake. It takes time to make it, but it most definitely worth it!
