Ingredients
- About 1 lbs (0.5 kg) of chicken breast
- 6 fluid oz (177 ml) of orange juice
- 6 fluid oz (177 ml) of soy sauce
- 6 fluid oz (177 ml) of honey
- 4 Tbsp vegetable oil
- 1 Tbsp of freshly grated ginger
- Dash of red pepper
- 3 Tbsp of peanut butter
Directions
Place all the ingredients in a bowl and mix them well. Mix until the peanut butter has dissolved.
Cut the chicken breast into smaller pieces.
Place the chicken in the bowl.
Put it in the fridge over night.
Place the chicken into a pan and bake at 375 F (190 C) for 20-25 min.
In a small pot, boil the sauce and use it for your potatoes or rice.
Thoughts
This is my favorite way to serve chicken. The flavor is unique, but delicious. The meat becomes very tender and flavorful. The chicken becomes rich in flavor. I am not a fan of peanut butter, but I love it with this chicken. It takes on a new personality.
It is best served with rice or potatoes, but I prefer the rice option. I like to add some vegetables like peas or carrots. This is a recipe that can be enjoyed by all from kids to grandparents.

Superb idea, and definitely vaults atop the list of Things I Must Try – Now! Really, few combinations are better, and as underutilized, as is peanuts and chicken. Satay started us down this path, and you’ve led it onward.
