Level of difficulty: Easy
Ingredients
Crust
- 1 cup of flour
- 1/2 cup of sugar
- 1 stick of butter (113 g)
- 1 egg
Directions
Put all ingredients in a medium bowl.
With your hands mix them until they create a smooth, light brown dough.
Spread the dough in a tart or pie pan.
Bake at 325 F (163 C) for 25 min.
Ingredients
Filling
- 2 1/3 cups (600 ml) of plain yogurt
- 3 eggs
- 2 Tbsp of flour
- 1 tsp of vanilla extract or vanilla seeds
- 3/4 cup of confectioners sugar
- 1.5 Tbsp of honey
Directions
Mix all ingredients together well.
Pour the filling into the already baked crust.
Bake at 375 F (190 C) for 30 min.
After it cools, decorate it with your favorite berries.
Thoughts
This is the ideal dessert for the summer. It is light and not too sweet. The fruit is the perfect addition to this summery treat.
The flavor is similar to that of a cheesecake, but it is much lighter as it is yogurt based. It is also easier and faster to make than a regular cheesecake. The texture is very smooth and fluffy.
I think it tastes the best once it is chilled. It becomes more refreshing.
This has been a summer favorite for me and everyone that I have made it for. I love eating it when sitting outside and drinking some cold lemonade or a smoothie.

Awesome technique, mixing and forming the crust by hand. Bumps up the “handmade” percentage a few spots. How do you imagine it would be with thinly-sliced peaches and raspberries atop it? Going for the whole “Melba” theme.

Definitely, though I’ll wait a month or so for Chambersburg peaches, the best available here in the Northeast. Wouldn’t want to insult the tart, after all!
