Ingredients
- 1 clove of garlic
- 1 onion
- 1 large carrot
- 1 yellow pepper
- 1 can of green peas (425 g)
- 1 can of corn (425 g)
- 27 oz of collard greens (765 g)
- 1 tsp of oregano
- 1 tsp of dried basil
- 3 eggs (can be omitted for a vegan option)
- Salt
- Pepper
Directions
Cut the carrot and pepper into small cubes.
On a skillet, heat up the garlic, onion, carrot and pepper until the onion are garlic become golden.
Mix all the ingredients together.
Bake at 350 F (180 C) for 35-40 min.
Alternative option
Make balls out of the veggie mix. Roll them in bread crumbs.
Bake at 375 F (190 C) for 30 min.
Thoughts
These are inspired by the Ikea veggie balls. They are very delicious. Once I tried them at Ikea, I knew I had to find the recipe and make it myself.
The collard greens are the magic ingredient in these. That is what gives them their unique flavor.
They go great with some mashed potatoes or rice. It is a quick and easy dinner option that even the picky eaters will enjoy.

Thanks for the link, I like it, will certainly make it and also try the mixture cooked into balls, that’ a good idea, if not all eaten you can deep freeze them for another day.
