Coconut Tart

Level of Difficulty: Easy

Crust

  • 1 cup of flour
  • 1/4 cup of sugar
  • 3/4 of a stick of butter (about 100 g)
  • 1 egg

Mix all ingredients with your hands until they create a smooth dough.

Spread it out in a tart or pie pan.

Bake at 350 F (180 C) 15-20 min

Filling

  • 3 eggs
  • 2/3 cups of sugar
  • 1 stick of butter (100 g) melted and slightly cooled
  • 2 cups of coconut flakes

Mix eggs, sugar, and butter together. Then, add the coconut

Spread strawberry jam on the still warm crust.

Pour the filling on top of the jam.

Bake at 350 F (180 C) for 20 min.

Thoughts

I love tarts and I love coconut! When I found this recipe, I knew I had to make it. This has made it into my top 3 favorite tarts. I really like how the coconut on top makes a crispy shell, but underneath, the filling stays soft. The strawberry jam gives a nice flavor twist.

If you like coconut, then you will love this tart. The flavor is wonderful and after one piece, you will want more. I hope you enjoy this as much as I did!

  3. Your latest creation is perfect for this time of year. Really, there’s something transformative about enjoying something tropical in January. In that spirit, lemon curd might be a nice addition too, don’t you think? The aroma in the kitchen (house) must’ve been intoxicating when this was in the oven!
