Thoughts
I love tarts and I love coconut! When I found this recipe, I knew I had to make it. This has made it into my top 3 favorite tarts. I really like how the coconut on top makes a crispy shell, but underneath, the filling stays soft. The strawberry jam gives a nice flavor twist.
If you like coconut, then you will love this tart. The flavor is wonderful and after one piece, you will want more. I hope you enjoy this as much as I did!

My daughte-n-lobe and I have a mutual obsession with my coconut pie, this may be just what we need to have our fix, a bit more often 😉

Your latest creation is perfect for this time of year. Really, there’s something transformative about enjoying something tropical in January. In that spirit, lemon curd might be a nice addition too, don’t you think? The aroma in the kitchen (house) must’ve been intoxicating when this was in the oven!
