- 1.5 ripe avocados
- 1 tsp of lemon juice
- 2 sticks of butter (220 g)
- 1 cup of sugar
- 1 tsp of vanilla extract
- 4 eggs
- 2 3/4 cups of flour
- 3 3/4 tsp of baking powder
- 1/2 cup of ground almonds
- 3.5 Tbsp of milk
- Pinch of salt
Puree the avocado with a fork. Add the lemon juice to it in order to keep the green color for the cake.
Then, add the butter, sugar, vanilla extract, salt. Mix everything together well.
Add the flour, baking powder, and ground almonds in three portions alternating with adding milk one Tbsp at a time.
Mix everything well. The dough will be heavy.
Coat a bread pan or a tube cake pan with butter and flour to prevent sticking.
Bake at 350 F (180 C) for 60 min.
- 1 cup of confectioner’s sugar
- Tiny bit of boiling water
- Some lemon juice
The proportions vary based on your preferences.
Mix these ingredients together and pour over top of the cooled cake.
*Another great topping would be melted chocolate!
I have never baked with avocado and I’m not a huge avocado fan, but I had some avocado at home that no one was eating, so I thought why not see if there are recipes with avocado. I found this recipe and was intrigued. The first thing that got me was the really pretty shade of green that the cake was.
I really was not sure what to expect, but it turned out quite good! it tastes better on the second or third day. The flavor becomes more defined. Overall, the flavor of it is very delicate. If you don’t like avocado, I still recommend trying it because it doesn’t taste strongly of avocado.
After trying the first piece, I thought to myself that it would taste amazing with a chocolate topping as opposed to a glaze. Next time I make it, I will melt chocolate and pour it over top. I’m excited to try that out.
