Strawberry Upside-down Cake

Ingredients

  • 1 lbs (0.5 kg) of strawberries
  • 1/4 cup of brown sugar
  • 2 Tbsp of corn or potato starch
  • 1 3/4 cups of flour
  • 2 tsp of baking powder
  • pinch of salt
  • 3/4 cup of sugar
  • 2 eggs
  • 1/2 cup of sour cream
  • 1 stick of butter (115 g)
  • 1 tsp of vanilla extract

Directions

Slice the strawberries, and in a bowl, mix them with the brown sugar and starch.

Spread the strawberries on the bottom of a round cake pan.

Melt the butter. Mix all the remaining ingredients together and pour the batter over top of the strawberries.

Bake at 350 F (180 C) for 30-35 min.

Flip the cake over onto a plate after it cools.

Thoughts

I found this recipe on Delish, and as a strawberry lover, I had to give it a try. I rally enjoyed it, but I wish that it was more moist. If you have ways that you use to make a cake more moist, share in the comments down below.

Overall, this cake is perfect for the summer as strawberries are in season, and it is perfect for some summer parties. It presents itself beautifully with the strawberries on top. It is a perfect treat for a lovely summer day.

  1. The photo mesmerizes – I’m lost in a sea of strawberries! Great cooking starts with utilizing ingredients when they’re in season, and this is the berries’ time. You chose well – it’s almost as though you have skills, or something.

    A couple things come to mind, for moistening agents. One is to add a little complimentary-tasting liquor – Grand Marnier always works well with fruit. Just a splash or two.

    Another possibility, as this is a yellow cake, is to mix small pieces of white chocolate throughout the batter. As the cake cooks, the chocolate melts, infusing the cake with creaminess and moistness. Not enough white chocolate to influence the taste, but sufficient in improve the texture. I don’t know, maybe an ounce of white chocolate, chopped?

    What I do know is that you’ve create a dessert that sings summer’s melody, beautify.
