Apple Pancakes

  • 7 oz (200 g) of plain or Greek yogurt
  • 2 eggs
  • 3.5 Tbsp of sugar
  • 1 cup of flour
  • 1 tsp of baking powder
  • 1 tsp of vanilla extracts
  • 1 tsp of cinnamon
  • Pinch of salt
  • 2-3 small/medium apples


Mix the eggs and the yogurt. Then add the sugar, flour, baking powder, vanilla, cinnamon. and salt.

Peel the apples. Remove the middle. Cut in 4 and then cut into slices.

Add the apples to the batter.

Make the pancakes on a little bit of oil and low heat.


This is the best breakfast for this season or even for dinner if you want to have breakfast for dinner one day, like I did today 😉

The great thing about these is that you don’t need to add any toppings to add flavor because the apples add sweetness and texture.

This portion makes about 15 pancakes, so I made twice the batter as it takes a few to feel full.

These are easy and quick to make, so I highly recommend trying these out this weekend for breakfast.

  1. Beautiful! What makes apples so perfect for cooler weather is that they “play” so well with all manner of warming spices. In your case, cinnamon.

    Then, when you serve up the pancakes, hot off the griddle – perfect! Makes you happy summer is over. At least for a blissful morning.

    Splendid! By the way, this post just inspired a though – maybe, instead of limiting yourself to a bakery, maybe you should start a catering company. I bet people would pay good money for you to bring these wonders to them!

    1. I really appreciate your idea 🙂 Catering is something I have been thinking about lately. It would be easier to start as I could do it right from home, and I think that is how I will start my business!
