Lemon Bars

Difficulty Level: Easy

Ingredients 

Batter

  • 5.5 oz (160 g) of softened butter
  • 3/4 cups of sugar
  • 3 eggs
  • Lemon zest from 2 lemons
  • lemon juice from half a lemon
  • 1 cup of flour

Directions 

First, mix the sugar and butter until they form a smooth, white mix.

Add eggs in one by one constantly mixing.

Add the lemon juice and zest.

Finally add flour and mix everything well.

Spread it in a 9 in x 13 in (23 cm x 33 cm) pan and bake at 300 F (150 C) for about 25 min

Glaze

  • 1 cup of confectioners sugar
  • 3 Tbsp of lemon juice
  • Zest from 1 lemon
  • A little bit of boiling water

In a cup mix the confectioners sugar, zest, and juice. Slowly add boiling water mixing it until a white glaze forms.

Spread the glaze across the cooled cake.

Thoughts 

This is a wonderful lemon dessert for all the lemon lovers out there. It is a refreshing and soft pastry. The lemon flavor is very pronounced. It is not too sweet and not too sour. There is a perfect balance of flavors here. This is my favorite lemon pastry that I’ve tried making

It makes a perfect treat for a picnic, lunch, and birthday 😉

  2. Superb recipe, as always! Plus, lemons almost always are good, so this dessert is “in season” whenever someone’s lucky enough to try it.

  4. I tried this recipe out last night and it turned out delicious! I did use coconut oil in place of the butter, I did use a little less coconut oil, but they still turned out great! It was a very easy recipe to do. My husband loves them too!
