Crust
- 2 cups of chocolate animal crackers
- 5 Tbsp of butter
Crush the cookies. Melt the butter.
Mix them together and spread on the bottom of a 9 in (23 cm) round pan.
Bake at 350 F (180 C) for 10 min.
Set aside to cool.
Filling
- 24 oz (680 g) of softened cream cheese
- 1 cup of dark chocolate chips
- 1 cup of sugar
- 4 eggs
- 1/2 cup of heavy cream
- 2 Tbsp of unsweetened cocoa
- 1 tsp of vanilla extract
Melt the chocolate and set it a side to cool a bit.
Beat the cream cheese with a mixer for a few minutes.
Add sugar and vanilla and mix it.
Add the melted chocolate, heavy cream, and cocoa powder and mix.
Next, add eggs one by one and mix in between.
Pour the batter over the crust.
Place a dish with hot water on the rack below the one on which you will put the cheesecake.
Bake at 325 F (170 C) for 70-80 min
Set aside to cool and then, put it in the over overnight.

I really enjoyed this cheesecake. It was light and creamy, but the chocolate flavor was strong. It melted in my mouth as I ate it. This is an absolutely fantastic cake. The cocoa powder makes it not so sweet. It is simply perfect. It officially has become my favorite cheesecake and I will be making it many times.
