Pear Cake

Level of Difficulty: Easy 


  • 4 large pears
  • 3 eggs
  • 3/4 cups of sugar
  • 1 container of mascarpone (250 g)
  • 2.5 Tbsp of oil
  • 1.5 cups of flour
  • 1/4 cup of potato starch
  • 1.5 tsp of baking powder


Peel the pears and cut them into large cubes.

With a mixer, beat eggs and sugar until they form a smooth, fluffy, white mixture.


While still mixing, add the mascarpone in three portions.

Then, slowly add oil.

Next, add sifted flour, potato starch, and baking powder.

At the end, add half of the pears. The batter will be thick.

Pour the batter into a cake pan. Sprinkle the rest of the pears on top.


Bake for 40-50 min at 320 F (160 C)

Sprinkle powdered sugar on top.


This cake is dense, yet very delicate in flavor. It is not too sweet. It is an Italian cake, hence the use of mascarpone, which adds a great twist to the flavor. Pears are a great fall fruit, but often get overlooked during this season. However, there are many great recipes with pears. The flavor is the best a day after it is baked. It is ideal with some warm tea or coffee on a chilly fall day.
