Crepes

Level of Difficulty: Easy

Ingredients

  • 2 cups of flour
  • 4 eggs
  • 2 cups of milk
  • 1.5 cups of water
  • 6 Tbs of oil or butter
  • Pinch of salt

Mix all the ingredients together.

Pour onto a hated pan with a bit of oil.

Makes about 20 crepes (fillings below are for 10 crepes each).

Fillings

Spinach

  • 9 oz (255 g) of frozen spinach
  • 2-3 cloves of garlic
  • 1/2 an onion
  • 2-3 Tbsp of ricotta cheese
  • Salt
  • Pepper
  • Chili flakes

Saute the garlic and onions for a few minutes.

Add the spinach (doesn’t have to be completely thawed).

Add the spices and cook until the spinach is soft and hot.

Mix in the ricotta.

Serve with warm crepes.

Ricotta with fruit

  • 1 cup of ricotta
  • About 12 oz (340 g) of blueberries or raspberries
  • Sugar to taste

Blend the fruit until all smooth.

In a bowl, mix it with the ricotta and sugar.

Serve with hot crepes.

Thoughts

Crepes are a fun option for breakfast, lunch, or even dinner. There are so many options as to how to server them. Sweet or savory, it is all delicious!

The fillings I gave above, are some of my favorites, but there are many more options that range from just a sprinkle of sugar to chicken with vegetables.

Crepes are my favorite Friday dinner option. In Poland, we do not eat meat on Fridays, so a lot of fun dinner options including crepes are served. My mom made either fish, dumplings, or crepes on Friday, and naturally, the sweet crepe option is always my favorite.

  1. Absolutely – crepes are supremely versatile! Breakfast, brunch, dinner…sweet, savory, spicy fillings…the universe expands relentlessly.

    My favorite filling? Mushrooms! Meaning, it’d work for you on a Friday too. I’m not a vegetarian (just a glance at my blog shows that), but mushrooms are superb.

    Your spinach creation looks pretty darn spectacular too!
