Triple Layer Cake

Dark Chocolate Layer

  • About 2 oz (50 g) of dark chocolate
  • 2 eggs
  • 3 Tbsp (50 g) of butter
  • 5 Tbsp of flour
  • 1/2 tsp of baking powder
  • 4 Tbs of sugar

Melt the chocolate and set aside to cool.

Beat the sugar with butter (room temp) until a light mixture.

Add the melted chocolate and mix and add the egg yolks one by one.

Add the flour and baking powder.

In a separate bowl, beat the egg whites until stiff.

Mix the egg whites with the chocolate batter.

Bake at 340 F (170 C) for 12 minutes.

White Chocolate Layer

  • 10.5 oz (300 g) of white chocolate
  • 3/4 of a cup of milk
  • 1 cup of heavy whipping cream
  • 2 tsp of gelatin

Pour enough water just to cover the gelatin in a bowl and soak the gelatin in water for 10 min.

Then, heat the gelatin until it has dissolved. DON’T boil it.

Boil the milk and then add the chocolate. Let it dissolve in the milk, add the warm gelatin, and mix everything just to combine the ingredients. Let it set and start to solidify slightly in the fridge.

Beat the cream until stiff. Add it to the chocolate mixture in 3-4 portions combining all ingredients.

Spread it over the cooled dark chocolate layer and put it in the fridge.

Strawberry Layer

  • 25 oz (700 g) of fresh strawberries
  • Strawberry jello powder

Blend the strawberries.

Heat them up until they boil.

Add the jello and mix with the strawberries until completely dissolved.

Pour over the strawberry layer.

Refrigerate for at least 10 hours.

Thoughts

I made this cake for Valentine’s this year and it was a hit! This combination of flavors is absolute heaven. None of the layers overpower the others. They work in harmony. It is a cake like no other.

It is easy to adjust it into any size cake pan. You only have to watch the bake time for the dark chocolate layer.

  1. Perfect for Valentine’s Day, especially as you adorned it with sliced strawberries. In many cases, the berry’s inner core looks like a heart. Even better!

    Your creation, overall, recalls chocolate-covered strawberries, except much more refined.

    With this, no doubt, you’ve taken over for Cupid, in creating Valentine’s Day romance.
