- 1 zucchini
- 3 cups of flour
- 1 tsp of salt
- 1 tsp of baking powder
- 1 tsp of baking soda
- 2 tsp of cinnamon
- 3 eggs
- 1 cup of oil
- 2 cups of sugar
- 3 tsp of vanilla extract
Shred the zucchini
Mix the dry ingredients first. Then, add the eggs, vanilla extract, oil, zucchini.
Grease or line with parchment paper two bread pans.
Divide the batter between the two pans.
Bake at 350 F (180 C) for 50-60 min.
Right after pumpkin bread, this is my second favorite bread to make. It is fluffy, soft, slightly moist, and the perfect treat with a warm beverage. I love taking a piece for lunch as a little treat in the middle of a long day. It is a classic pastry, but it never disappoints. Over the years of trying out different recipes, but this is the one I always come back to.
