Ingredients
- 1 zucchini
- 3 cups of flour
- 1 tsp of salt
- 1 tsp of baking powder
- 1 tsp of baking soda
- 2 tsp of cinnamon
- 3 eggs
- 1 cup of oil
- 2 cups of sugar
- 3 tsp of vanilla extract
Directions
Shred the zucchini
Mix the dry ingredients first. Then, add the eggs, vanilla extract, oil, zucchini.
Grease or line with parchment paper two bread pans.
Divide the batter between the two pans.
Bake at 350 F (180 C) for 50-60 min.
Thoughts
Right after pumpkin bread, this is my second favorite bread to make. It is fluffy, soft, slightly moist, and the perfect treat with a warm beverage. I love taking a piece for lunch as a little treat in the middle of a long day. It is a classic pastry, but it never disappoints. Over the years of trying out different recipes, but this is the one I always come back to.

Another tempting creation. Once again, aces. When I was a child, my older relatives called zucchini bread “cake.” It makes sense now, though at the time I thought, “We were promised cake, but all I see is squash bread. Is this a joke?” Oh, how the intervening years changed my mind!

I have never used flax eggs, but I think it will work out. I’ve come across recipes for zucchini bread that have flax eggs and all the other ingredients remain the same 🙂 Let me know how it turns out!
